Almogrote is a pâté or cheese paste that comes from La Gomera that has been prepared for centuries. This cream spread is made with cured goat cheese and mojo picón and it is also known as Gomero pâté.
It has a strong cheese flavor and a spicy touch thanks to pimiento picona which is a pepper used to make Canarian mojos.
It has become a popular dish in Canarian cuisine and is considered a gourmet paste. Its consumption is common throughout the Canary Islands as an appetizer. It can be found in restaurants and hospitality businesses, in hotels, as well as for individual consumption in supermarkets.
Here is a simple recipe for Almogrote
Ingredients:
• Half a kilo of very cured goat cheese. It must be Canarian cheese,
One pepper.
One tablespoon of hot paprika.
750 ml of sunflower oil.
Preparation:
Grate the cheese with a knife, finely chop the pepper, and put everything in a mortar. Once in the mortar, add the hot paprika and gradually add the oil until you get a homogeneous paste that is not too runny and can be spread. Serve with toasted bread.
